The goal of my research is to develop practical solutions to ongoing challenges in microbial food safety and spoilage. This work requires an enhanced understanding of incidence, harborage, transfer, resistance to removal, and tolerance to inactivation in order to develop risk-based interventions. 

My current projects explore: i) identification of experimental variables that impact microbial tolerance to, among other things, cleaning and sanitization under both wet and dry sanitation regimes; ii) understanding the spoilage potential of both bacteria and fungi based on intrinsic and extrinsic production conditions; and iii) the development of tools for better application, monitoring, and verification of critical food safety programs.
